Wine Profile
Tasting Notes
Faraday is 116 km north of Melbourne and is an unusual place to grow quality wine grapes. However the cool climate has proved to be well suited to the production of Pinot Gris. A delicate, yet complex wine with flavours of jasmine, honeysuckle, pears, and spice are married to a balanced palate that incorporates a touch of sweetness and a lingering finish.
Vineyard Notes
The cool temperatures that marked the beginning of Summer were ideal and the warm temperatures when they arrived ripened the grapes nicely. The fruit was hand-harvested and picked at the optimum balance of sweetness and crisp acidity, while maintaining the lovely, fresh fruit flavours.
Winemaker Notes
The free run juice was fermented partially in stainless steel and partially in seasoned oak barrels and inoculated with wild yeast to introduce elements of complexity. Once fermentation was complete the wine was then filtered and bottled.
Food Pairing Notes
Thai food with some spice.
