Wine Profile
Tasting Notes
An Australian style of Sangiovese for the brave and the bold. A fuller bodied wine with an impressive array of flavours – cherry, plums, blackberry, mulberries and currents, framed by a wild and dusty spiciness. The fine-grained grippy tannins on the palate make this a wine ideally suited to match with food.
Vineyard Notes
Our original Sangiovese vineyard has matured nicely, but for the first time the 2016 vintage contains fruit from our new vineyard, planted exclusively to the Brunello clone. The berries were hand-harvested in two separate passes to ensure that the fruit was picked at its best.
Winemaker Notes
Very much a wine that is handcrafted, it was fermented in open vats with daily hand plunging. It spent 21 days on skins to maximise complexity in the finished wine and to develop the fine-grained tannins that the variety is known for. After a further 12 months in seasoned French oak barriques, the Sangiovese was bottled without fining.
Food Pairing Notes
Rich Osso Buco with gremolata
