2017 Black Label Cabernet Franc Syrah

Our Cabernet Franc has always been a little shy in producing its best, but in 2017 we knew that the fruit was sensational prior to harvest. The outcome was a stand alone Cabernet Franc (with a little help from Syrah) that is a lovely smooth wine with flavours of blueberries, mulberry, juniper and allspice are wrapped around a savoury core with well-balanced and fine tannins. Vineyard Notes
The Cabernet Franc produced in 2017 was one of the surprising results of a wonderful vintage in Bendigo. The cool weather conditions in Spring were ideal for an excellent fruit set and the warmer weather in Summer ripened the grapes. The berries were hand-harvested and only the best fruit was conveyed to winery for processing.
Winemaker Notes
Twenty-five percent of the Cabernet Franc was left as whole bunches, while the remainder was lightly crushed. The fruit was then left to cold soak with fermenting Shiraz skins to enable a slow, gentle extraction of colour and tannin. After four days the must was allowed to begin fermentation naturally and was minimally handled throughout, with pump overs kept to a low level. At dryness, the wine spent twelve months in four and five year old French barriques, with five percent being aged in new French oak.
