A beautifully rich Shiraz from an excellent warm year in Bendigo, with a complex nose of dark cherries, plums and smooth chocolatey oak. The palate has great depth of flavour combined with weight and intensity to produce a memorable wine that is fabulous to drink now but will benefit from cellaring over the following 18-20 years.
2014 was a magnificent warm year which saw the vines in excellent condition with beautiful ripe fruit coming up to vintage. Hand harvesting began in February and continued through into March to capture the berries in their peak condition. Cropping levels were kept to a low 1.5 tonnes per acre to help build intensity and concentration into the finished wine.
The fruit was destemmed, with some bunches crushed and was then pumped straight to open vats and stainless steel tanks for fermentation. A slow fermentation on skins over the next 14 to 20 days occurred with the number of pump overs and plunging kept to a minimum and to maintain the quality of the fruit. The wine was aged for 18 months in French oak barriques (30% new), with a small amount (5%) being aged in American oak prior to bottling.
